Baked Fruity Oatmeal


I needed new breakfast ideas that are quick and healthy. I had heard of baked oatmeal before and so I searched the internet for recipes. A lot of the ones I found were packed full of sugar and salt and a million ingredients. I then decided to check out Oh She Glows, a healthy vegan website. I came across her Fruity Baked Oatmeal recipe and thought I would give it a shot. I did not have a lot of the ingredients on hand so I simplified it for what I had in the cupboard.  It turned out so great! Angela's sounds even better so I will make sure to have more of the ingredients on hand the next time.

My (simplified) version of the Fruity Baked Oatmeal:

1 chopped banana
1 peeled and chopped apple
1.5 cups of rolled oats
1 and 1/4 cups of almond milk
vanilla
maple syurp
blueberries 

I preheated my oven to 350 degrees.
I added the banana, apple and oats into a bowl and stirred them together. I added the almond milk, and just eyed the portions of maple syrup and vanilla.. I really love maple syrup so I added a bit more than what the recipe called for.
I poured it all into a greased glass baking dish. 
I covered the top of the mixture with blueberries.
Put it in the oven for 30 minutes.
And it was done !

I had a sample last night but had it for breakfast this morning. I reheated it and topped it with fresh strawberries and a bit more maple syrup. It was so yummy!
There is still a lot left and will be great for breakfasts this week :)
